Serves 6

kcals 250 (1050 kJ) Fat 8 g, of which 1.5 g saturated Sodium 75 mg

1 Sift the flour in a large bowl and lightly rub in the unsaturated spread until the mixture forms coarse crumbs. Stir in the sugar.

2 Place the fruit into a 1.2 litre (2 pint) ovenproof dish. Add the lemon rind and juice and cinnamon. Spoon the crumble mixture over the fruit and bake in a preheated oven, 180C (350F), Gas Mark 4, for 2530 minutes until golden brown. Serve warm.

Other fruit combinations. Always remember to use plenty of fruit 500750 g (111/2 lb) and sweeten slightly sour fruit by mixing with sweeter fruit, a little grated rind and juice of an orange or a variety of dried fruit. Try the following combinations:
Plum and blackberry
Rhubarb and strawberry
Cranberry and apple
Pear and blackcurrant
Apricot and peach

125 g (4 oz) wholemeal plain flour
50 g (2 oz) brown sugar
50 g (2 oz) unsaturated spread
500 g (1 lb) cooking apples (such as Bramleys), peeled, cored and sliced
6 dried or fresh figs, diced
grated rind and juice of 1 lemon
1 teaspoon ground cinnamon

Nutritional Tips
Figs are high in dietary fibre, low in fat and offer a non-dairy source of calcium, iron and magnesium. They are ideal ingredients in baking, salads and make good snacks.
